Sometimes women who are very worried about pregnancy because they are "never late" write to EmpowHer when they are a week or even 10 days late, and then later they do get their periods. Hormones are tricky things and when we're guessing, they're impossible. With the amount of stress you say your girlfriend is under, it absolutely could make her period late.
I'm glad your girlfriend will take a pregnancy test so the two of you can find out for sure. If she is five days late, the test should be accurate.
